Cream-O-Tomato Mallow Soup
- 4-6 tomatoes
- 1-2 avocados
- 1 cup mallow greens
- 1 bunch basil/parsley/cilantro
- 2-3 T miso
- 2 cloves of garlic
- 6 cups of water
Blend all ingredients in the blender until smooth. If desired, heat until just warm enough to eat with pleasure. Garnish with fresh diced parsley and chives.
Burdock Root Soup
- 1 cup burdock roots
- 1 avocado
- 2 Tbsp miso
- 1 tsp cumin
- 2 cloves garlic
- 1 tsp sea salt
- 4 cups water
- Pinch of cayenne pepper
- 1 cup diced celery
Blend all the ingredients well into a creamy soup except the celery. Add the dice celery to the soup mix. Warm lightly and serve immediately to enjoy a rootsy grounding meal of the earth?s goodness.
Elm Leaf Salad Special
- 2 cups Chinese elm leaves, finely chopped
- 2 apples, diced
- 1/2 cup carrots, shredded
- 1/4 cup onions, diced
- 1/2 cup lightly ground almonds
- 1 avocado, diced
Collect your elm leaves from the nearby fast growing shade trees near your home and give thanks for their great service in helping cool our planet in addition to their delicious leaves. It is fun to start eating trees. Not only do you get a sense of the good lives that koala bears or monkeys live, but we also benefit from their great deep and wide root systems providing us with a whole new rainbow set of minerals for our health. Combine all the ingredients and drizzle with sunflower oil and apple cider vinegar with a dash of raw soy sauce.
