Phat Nettle Oaties

Kris Hill gets the credit for this recipe. She has a special relationship with the wild nettle and brings us the great nutrition of the nettle into a delicious soft cookie treat.  Nettles are known for their high protein and iron content in addition to a host of other beneficial minerals and vitamins.  Nettles are best harvested in the spring before the flowers appear on the upper stems.  Harvest them carefully with gloves and dry the leaves on screens in the shade.  It is a healthy initiation blessing to get stung by the nettle, so just say thank you and carefully proceed. Once dry, the stinging quality of the nettle has lost its potency making it much more friend to handle.  After they are dry, we grind the leaves in a blender until it becomes a powder and store it in a dark glass jar .
