Tasty Turtle Rosehip Granola Bars

This granola bar was our first original turtle creation and opened the door for us to expand our creativity and service into the community in a diversity of recipes that eventually followed.  We celebrate the rosehip in these bars.  Wild rose grows in large stands in many environments in the woods close to home.  In the late fall, the rose hips turn deep red and become ripe and loaded with Vitamin C.  We gather the hips and dry them in our solar dehydrator and store  them in a glass jar for the rest of the year.  Once dried we  grind the rosehips in a coffee grinder into a powder and strain out the seeds.  This rosehip fruit powder is then used as the key ingredient for the tasty turtle granola bars. They last up to a month in the fridge and will keep much longer if stored in the freezer.
